I like to eat a strong breakfast. It's just my personal preference. I usually do an egg breakfast with lots of veggies and a meat protein choice, and although I make sure to vary the vegetables and meats, lately I had been getting bored of this. I was itching to find another breakfast option that would help me kick start my day and keep me full for a good while. But even with a million breakfast options out there I was feeling stubborn in switching things up. I didn't want to give up the nutrition I was getting first thing in the morning (this is silly in reality, since I still had a whole day ahead of me to make sure I was eating a balanced diet, but we humans naturally resist change, so I'll just admit it--I'm human).


My uncle recently gave me some beautiful avocados from his garden. Let me tell you, these were the CREAMIEST, most delicious avocados I've ever had. And they sparked an idea in me: Avocado Toast! Now, I know this isn't ground breaking. Avocado toast has been all the rage for years, but I never thought about making it for myself at home. I usually save avocado toast for over-priced brunch. BUT WHY? No reason at all.

So I dove in, didn't look at a recipe, and just concocted my own version of avocado toast. And it tasted AMAZING. So amazing that I've been eating it for breakfast almost everyday since.


My hope is that this will be the first of many avocado toast recipes (and other recipes) that I'll share with you. I'll keep experimenting. For now, enjoy this recipe, share it with your friends, and let me know if and when you try it!

A few words about this recipe: don't let the official format fool you, I tend to eyeball everything (especially the spices!). But for the purposes of helping you make a yummy avocado toast with accurate nutrition information, I measured it all out. Never hesitate to contact me with questions!

Please note, this recipe makes ONE SERVING. However, its very simple to multiply.


TIP: I usually cook the full package (1 pound) of ground turkey at once and place the remaining amount not used in this recipe in the refrigerator for meals during the rest of the week.


ANOTHER TIP: This meal is amazing any time of day! Don't let the egg limit you to enjoying this recipe only in the morning hours. I'm all for breakfast for dinner!

ONE FINAL TIP: If you are hoping to cut down on fat intake, start by altering the amount of oil used to cook the turkey, veggies, and egg. If you happen to have better pans than I do, you may be able to cut the amount of oil by half.
